Chicago Chefs. Their Favorite Summer Bites.

Last week found us at one of the city’s most fabulous foodie fests of Summer, the Green City Market BBQ.  Chefs from all over the city set up camp in Lincoln Park, fired up their grills, and served us some of the most flavorful small bites of the summer. Here were some of our favorite flavor bomb-quality bites of the night….

FoodEase chef Janet Kirker wowed us with small bites of spicy and smooth eggplant caponata on crusty slices of toasted cibatta. Pow!

Spiaggia‘s chefs Tony Mantuano and Sarah Gruenberg served delightful little bite-sized pizzetti with creamy Capriole Farms Goat Cheese, Kinnikinnick Farms Arugula Pesto and Nichols Farms Sweet Onions.

West Town Tavern, (which we learned yesterday, was sadly our last taste,) served up the most smokey, savory, short rib with one bite of perfect potato salad. Nothing more was needed! It was heaven.

We were completely blown away by the Catalpa Farms grilled lamb belly with Spence Farm apricots and Genesis Growers Cucumber. It was summer in a bite!!

The charming Chef Martial Noguier of Bistronomiquecreated the most lovely one-sip shots of cold, savory melon soup, spiked with shreds of fresh mint, it was the perfect way to end a warm summer evening.

Never to disappoint using ingredients from the market…Chef Paul Virant of Vie grilled some of the sweetest peaches that we’ve ever tasted and served them with a small bite of braised pork shoulder. So perfect.

And, our favorite of the evening, Pecking Order’s Chef Kristine Subido’s Filipino-inspired spicy sweet corn salad – served in one bite – and topped with creamy calamansi-spiked mayo.
