Summer “Mexique”

We created a summer BBQ with a Mexican flare as part of our mission to bring all worlds together through entertaining and food. We took some of our favorite outdoor BBQ classics and recreated them with the spices and textures traditionally used in the Hispanic culture.

No summer cookout is complete without the burger. So our Creative Culinary Director, Shawn Doolin, whipped up a spiced chorizo patty layered with arugula, garden fresh tomatoes and a house made smoky chipotle sauce. Wedged between a freshly baked bun with a blend of Mexican cheese. Yum!

Accompanying this spiced chorizo burger is corn on the cob elote style. Grilled to perfection then smothered in Mexican crema, guajillo chili powder for that extra spice, crumbled cotija and chopped cilantro. Messier the better when it comes to this dish! Served on the Venya silver tray from our Home Shop linked here. Too break up all the spices, we have also paired the burger with a fresh summer slaw. The slaw contains a mix of Mexican vegetables like jicama, chayote, mango and pomegranate. Along with a few non-Mexican ingredients like shaved fennel and hearts of palm. Garnished with vibrant edible flowers and drizzled with lime chili vinaigrette. But what is so “Mexican” about sipping on a can of Fist City beer you might ask? Well our beverage manager, Tom Sierra, used this locally crafted beer by Revolution Brewing Company to create a michelada. Fresh squeezed lime juice, one can of Fist City beer and a blend of sauces, spices and peppers went into this spicy yet refreshing concoction. Garnished with a lime wedge half dipped in chili power. Sip sip hooray!

Last but not least, dessert. We love finishing our summer cookouts with apple pie and what better way to incorporate vanilla beans than by blending them into a craveable vanilla bean ice cream. Pictured are mini fresh baked apple pies that taste even better than they look. Warm caramelized apples rolled in cinnamon with a dollop of ice cream. We bet you can’t have just one!
